Valentine's Day Breakfast Special


I used to think that you needed to spend a lot of money or be somewhere exotic to really spoil yourself. Now, with work consuming my life for five days out of the week, it's clearly the simple things in life, the ones I never have time for, that are the biggest indulgence. This includes the simple act of sleeping in. After a long busy week I can think of nothing better than a Saturday morning with nothing to do. How amazing is it to sleep in on a weekend, wake up to eat a delicious breakfast and... *Now here comes the beautiful part*... get back into bed and go back to sleep! It’s even better than my next favorite morning maneuver which my brother’s friend has appropriately coined “the sweet baby Jesus”. This move is quite similar; You wake up in the morning, get out of bed, take a nice hot shower, THEN… you get back in bed and go back to sleep. All sweet and clean in your sheets. Priceless.

So this Valentines Day, ditch the expensive dinner out and the overpriced gifts and really treat your special lady or dude by starting their day off right with breakfast at home. They can eat this delicious meal in the comfort of their jammies and get right back into bed afterwards...

I would suggest something extra special like goat cheesy eggs served with a dark chocolate chip scone.

Goat Cheese and Egg Scramble for 2
Adapted from Enlightened Cooking

Ingredients
-1/4 cup crumbly Goat Cheese
-About 8 fresh basil leaves
-2 Roma tomatoes
-4 eggs
-Olive oil
-Salt and Pepper
- A non stick pan

-Slice the tomatoes, drizzle them with a little olive oil and season with salt and pepper.
- Crack 3 eggs and 1 egg white into a bowl and sprinkle with salt and pepper
-Chop up about 4 basil leaves and put them on a skillet over medium heat with a little olive oil and the tomatoes
-Beat up the eggs with a fork, adding about a tablespoon of water and beating that in too
-Pour eggs into the pan
-As soon as they hit the pan (non-stick of course) use a wooden spoon or rubber scraper to move them around in long strokes (scrambling them)
- Once the eggs are starting to cook through add in about a 1/4 cup goat cheese and crumble it over the eggs
-Continue to scramble until the eggs are just barely cooked and take them off the pan
- Chop up a little of the extra basil and sprinkle it on top to make things all nice and pretty.

Too bad my Trader Joe's Raisin Bran knock-off cereal tastes more like dirt than any pre/post coital VDay meal.

This is excellent. I have a fear of Valentine's Day. This may help me conquer my fears by making it so much easier.

Usually I do, but not this glam shot! I need a new battery for my digi camera and egg photos on the iPhone tend to look like mush.
